Miso Quinoa Salad



Yummy Miso Quinoa salad - easy to throw together for a healthy lunch option.

1 x cup of Quinoa
1 x packet of Miso paste
1/2 x cup of beans (we used kidney, but 4 bean mix works well too)
1/2 x cup Cubed Tofu
1 x handful of baby spinach leaves
1/4 x cup of   peas
1 x sprinkle of nori flakes

Bring water to the boil and stir in miso paste. Add 1 cup Quinoa and peas, when cooked drain excess liquid before mixing through beans and tofu. Then serve over spinach leaves with a sprinkle of nori flakes and enjoy.
